Best Zucchini Bread Ever!

1 1/2 cups whole wheat flour
1 3/4 cups all-purpose flour
1 teaspoon ground nutmeg
1 teaspoon ground cinnamon
1 teaspoon salt
2 teaspoons baking soda
1 cup white sugar
1 cup brown sugar
1 tablespoon vanilla
4 eggs, slightly beaten
1 cup vegetable oil
1 tablespoon lemon juice
3 cups shredded zucchini, squeezed dry


Preheat oven to 325 degrees.
Mix the whole wheat flour, all-purpose flour, nutmeg, cinnamon, salt, baking soda, white sugar, and light brown sugar together in a large bowl. Fold the vanill, eggs, vegetable oil, lemon juice, and zucchini into the flour mixture one ingredient at a time with a rubber spatula. Divide mixture between two greased loaf pans.
Bake in preheated over 65-75 minutes. (Do toothpick test.) Cool on wire rack for 10 minutes.

Miss Abi



As I was looking over my past few months of entries I felt like I had neglected my little Abi (poor middle child!); so I decided to dedicate this post to her.

She is doing dance again this year with "Miss Brooke". She was a little bummed that she didn't get to do ballet and had to do Jazz, but now she is loving it. I always knew she had a little more shake in her!





Last week, she also started Preschool, well Joy School. A few of my friends have started a little joy school for our kids, they are all really cute and Abi loves having her own friends.

Her birthday is this week, she will be 4 and I can't believe it. She is so fun and adds a lot of spunk (and sass!) to our family.

Durke and my brother-in-law, Rich, rode in the "dreaded" Lotoja race this past weekend for the third time. For those of you who are wondering what the heck Lotoja is, it is a 206 mile road bike race from Logan, Utah to Jackson Hole, Wyoming; and we both hate it! It is such a long day, and is such a grueling race for Durke that we both honestly dread it! Why does he do it you ask, you got me, but for some reason he keeps entering. I think it's like childbirth, us moms always say "Wow, never want to do that again", but we do!





Anyways, the only good thing about this race is it ends in Jackson Hole; one of my favorite places on Earth. We were able to spend a couple days there and I got to eat at my beloved "Bubba's" so I was happy. We also saw a bear, some buffalo, and a few moose,




and we were able to hang out with Richard and Naloni who live in New Mexico.


It turned out to be a fun trip, and I was really proud of Durke, I have know desire to pedal a bike 206 miles!

Look who's 6!


Our little Gracie Bug turned 6 Tuesday. She has had a 3 day birthday party, just how she likes it. She stayed with my sister over the weekend while we were on a little "trip" (details later); and they threw a party for her, then when we got home on Monday we had a party for her with the Gordon side, and then yesterday we ordered pizza, popped popcorn and watched her new Barbie movie she got. Spoiled little girl! :) I think her most favorite part of her birthday was getting to be spotlighted in her school class and pass out treats and stickers. She had a permanent smile from ear to ear. It made me happy. Happy Birthday sweet girl!

Lifting Burdens: The Atonement of Jesus Christ



I found this last night and thought I would share it. Some people who are very important to me are going through an extremely hard time and this made me think of them. I truly believe the things that this video says.


Taco Salad

1 lb. ground beef, browned and drained
1 c. pinto beans, drained
1 sm. can diced green chilis
1 c. grated cheese
1 sm. onion, diced
1 head lettuce, shredded
1 can sliced olives, drained
1 tomato, chopped
1 sm. bottle Creamy Italian dressing

Toss all ingredients and serve with tortilla chips.

These make me smile...

You know every once in awhile when you take a picture and you love it or it just makes you smile. These are some of those. I took these pictures at the County Fair rodeo last weekend.



Gracie and Abi are best friends. I love that and it makes me happy. They play together so well and have so much fun together. Yea, they have their fights and they are doozies, but they really do love eachother. I think this picture shows it.


There's something about a Wrangler bottom that makes my heart flutter, both big boy bottoms and cute little boys' (for different reasons obviously!) Anyway, I had to take a picture of Louk in his because I just had to. I think it comes from my cowgirl roots.


Louk just makes me smile all the time, but he looks extra cute here!
